I'd assume you'd want to clear Caria Manor and a few hidden dungeons before pressing forward

It's not? You can go straight there sure (as i myself did). But the "by design" progression after Raya Lucaria would be the Caria Manor, radahn's fight, Ranni's questline if done (pseudo legacy dungeon, which have baller boss fights btw), deeproot, then Mt Gelmir (another pseudo legacy dungeon).

I guess I was trying to take Stormveil Castle too early. The heavy armor knights on the rooftops were destroying me in one or two shots, especially the one with the spin-to-win axe.

There are something like 15-18 "bosses" in Limegrave alone. Exploration yields equipment and Runes. Lots of people like to really explore the map before taking on the main quest.

I beat the Academy around level 40 after I found Soifra way too early and got a bunch of Smithing Stones I didn���t deserve. Honestly weapon upgrades are much easier to get than levels in this game.
