At the top it says that the thief starts at level ten but the table below says level nine????????

It's the collective sum of each stat's difference from 10 (base value). So the correct answer is 9.

If the Thief starts at 10, it has a wasted level compared to the other classes. Meaning if you sum the differences from 10, the thief class is 9 but starts at 10 so you lose a level. The other classes are all class level away from base.

Nope but classes are just base stats, so you can just pick for instance the Temple Knight because it has the base stats to wear almost any weapon, and then raise magic/intel to make him a caster

Barbarian is the original deprived. The armor you start with grants no protection and weighs nothing.

It seems to me that there are very few "optimal" classes in this game.
Anything that has high luck can be disregarded, unless you are going for a Blueblood Sword build. Otherwise it's a dead stat.
The op nature of spellcasting also makes classes with less than 10 in INT, MAG or FTH unappealing, reducing your options further. And Magician is rendered obsolete because Royalty exists.
In short, Royalty is always great because of it's low lvl and equipment. Knight and Priest if you have no specific build in mind. Temple Knight and Soldier come after that. Thief, wanderer, hunter, barbarian and magician seem to be niche choices unless I'm missing something.
