Not correct, Its assumed in DS3 that the character in DS1 linked the flame, if you do the dark end, its somewhat of an alternate reality. Just because DS3 exists doesn't invalidate your choice in DS1.

It does matter; the Chosen Undead's actions shape the world and the lives of all it's people for an age. Thousands of generations will live with the consequences of their choice. It's just that, as we learn in Dark Souls 2, the world is stuck in a cycle.Whether you rule as a Dark Lord or burn yourself as a Lord of Cinder, things will go on without you.
The Bearer of the Curse and the Ashen One are the only two who can truly break the cycle, but that doesn't mean the choices of the previous Lords was meaningless; just that time advanced and things changed.

Canonically, the Chosen Undead links the Flame and becomes the second Lord of Cinder, after Gwyn. Later, the flame is once again linked by another being, and again, and again; eventually, Prince Lothric refuses to link it, and this puts in motion the events of DS3.

Undead don't NEED bonfires to return; the curse is what causes that.
Bonfires just serve as places of respite for them. If you're skeptical, just think about what bonfires are made of: the ash of Undead and their Humanity. Undead created bonfires, and as such, would be able to exist after them.

It doesn't matter if you light the fire or not. The age of fire will come back, even if you chose not to kindle the fire. It's a cycle that repeats indefinitely. And the age of dark is not the real age of man. Because the fire will come back some day. The only solution to get the age of man is what you do in the best ending of DS3. The age of Hollows.

you got it kind of mixed. in dark souls true ending you dont light the flame, you take it into your soul and absorb it. you basically become an OP god that posseses all the fire in the world, whereas the age of dark is a reset of the universe.
