The can't aim up thing is complete bull****. They can aim up just fine and have one-shotted me many times by doing just that whilst I was farming for Sunlight Medals for the Master of Miracles Trophy

Only in SOTFS can they aim in an direction. In the original DaS2 they can only throw those dark orbs straight ahead.

The two drops are incredibly rare in my experience, and the "can't shoot up" thing is only true in the original version of the game. In SotFS, they can aim up at you when you're on the cliff next to the Stone Trader.

However you can still snipe the two Banediggers in the poison pit from the connecting tunnel without worry in SotFS. In fact, it seems to be safer now. in the original DS2 they would occasionally clear the lip of the cliff and hit you. Have yet to see it once since upgrading, and i've killed a LOT of Banediggers.

It seems like getting any of the enemies who can drop sunlight medals is almost impossible before the enemy stops respawning and you need to use a bonfire ascetic

covenent of champions does make enemies respawn forever, but, going that rout means dealing with enemies that do a bit more damage and you can summon so be carfule out there m8!

These guys look really cool, but in combat they are kinda lame. Almost all they do is shoot slow dark balls.

Honest question, how would you improve them in terms of combat? Faster walk speed? Faster melee attacks? Faster dark orbs? Those dark orbs do a LOT of damage and can one-shot some player who didn't level health much, so if these Banediggers shot fast dark orbs it might make people rage a bit. I'm not sure what could be done to "improve" them.

^ lol good job pretending the only thing you can do is make them faster. how about a more complex moveset? better ai? but nah let's keep pretending there was no way to make this bad enemy interesting

Step 1: join Champions covenant. Step 2: equip your lootsuit (go for Jester hat because using Avarice in the poison cloud is a terrible idea). Step 3: kill the 3 near the Mines Bonfire with hard hitting Pyromancy or Sorcery for a few hours. (Despite being "rare" drops Sunlight medals will usually appear at least once every 3-8 runs).
