You never can upgrade to +7 in NG, only in NG+. The max you can get in NG is +6, and if you used one then only to +5

The description very clearly states that consuming the soul earns you Humanity and HP at the cost of not being able to use it to reinforce your flask. I understand being unsure about where to use it (because depending on how you explore, you might not see the Fire Keeper in the Firelink Shrine for a while) but that wasn't your issue. You did exactly what the description advised you not to do. Did you try to eat the sublime bone dust in DSII?

It's not a big deal if you mess up with one. Your current flash level carry's over into New Game + and you can keep turning them in until you get to +7.

Yeah i ended up consuming two cause the only place that stated how to use it was the description and no one i know reads the description of anything in any game

Which is why it's a good thing that nowhere does it say you can get +7 on the first playthrough. You can, however, collect all 7 fire keeper souls on the first playthrough. You cash in the last one on your next playthrough.
