I remember reading about the Channeleers readying for Seath, they were his eyes, for he lost the sight in his search for the scales he so longed for.
I am one of those willing to visit the bonfires for time unmemmorial so others won´t have to...because I have ripped off my heart from my chest so other can keep their´s. One of those willing to stain my hand with blood so other can keep their´s clean...

Likely a lot of research on his magic and history of Lordran.
But given how many books there are, there's probably a lot more than that; one of the first things that comes to mind is the abyss, since we find his crystal golems and butterflies in Darkroot Basin, and the broken pendant carried by a golem in the archives, he must have recorded some data on that.

But as to why he used books to record all that (while he could probably have used something better suited to him than books, being blind and all) may be to give some freedom to his channelers and scholars so they can operate independently. (and read it back to him when needed)
