What I mean is, you want to predict his moves, and where he's GOING TO BE, instead of where he is. Use a regular greatsword for the reach, and the quick stagger. If you stay on his head, it's OK to trade a few Estus, for quicker buildup to that visceral attack. That's how I do it anyways. And I just beat him and Gael on NG+2.
